I used canned peaches, but next time I will use fresh peaches. I evem printed the recipe off to put with the dish so people can make it themselves and even see what is in it in case of food allergies. Made these for a family get together over the weekend and everyone loved them!! For my personal preference I think next time i will keep a little bit of the juice from the canned peaches instead of draining all of it to make it a little more moist. But even just doing the recipe as is my family ate it all, wanted more and liked it just how it was!

Crust and Topping: Using a hand mixer or stand mixer fitted with the paddle attachment, combine granulated sugar, baking powder, flour, and salt. Add butter, egg, vanilla, and almond extract.
Beat on low speed until the butter is evenly distributed in small pieces and the mixture is crumbly. Dump a little more than half of the mixture into the bottom of the prepared pan. Use your hand or the bottom of a measuring cup to evenly press the dough into the pan. Do you know if the finished bars freeze well? My guess is that they would freeze just fine, though.

Loved this, after making crust I discovered my peaches were bad so substituted rhubarb, and it was awesome but my bottom crust really stuck to the bottom of the pan.
This recipe looks very good. I lived in Georgia for a while and could never find any good peaches. I think all the best quality peaches were exported to other states.
Now, I live in Arizona and grow them in my back yard. Been harvesting them for 3 days now. Still more…. Making these right now but having problems with mixing in bitter. My problem each time though is that the crust is hard as a rock and hard to remove. Have you had this happen?

Description For a different take on a peach pie, try these Peaches and Cream Bars that have a shortbread crust, a creamy peach filling and a crumble topping. In the bowl of a mixer, combine the flour, sugar, and salt. Mix with the paddle attachment until combined. Cut the butter into small pieces and add in a few at a time. Mix until the butter is evenly combined and the mixture appears crumbly.
This can also be done by hand with a pastry cutter or with a fork. Press the remaining mixture into the prepared pan. Bake in the preheated oven until golden brown, 12 to 15 minutes. Let cool for at least 10 minutes. In a large bowl, whisk together the eggs and sugar. Add in the sour cream, flour and salt.
Fold in the sliced peaches. Pour over the cooked crust.
